Camargue is a natural region located south of France, between the Mediterranean Sea and the Rhône River delta. It is there that the salt “Fleur de Sel de Camargue” is produced. The method of gathering sea salt in Camargue is to draw seawater into basins, and to let the water evaporate. As the water does so, some salt crystals float on its surface, forming a delicate crust of crystals called “Fleur de sel”, or “Flower of Salt”. It is one of the finest quality salts, and is sometimes called “the caviar of sea salts”. It is said that the name Fleur de Sel comes from the aroma of violets that develops as the salt dries.
