This new venue, named Fran\u00e7ois Daubinet chez Coutume<\/u>, marks the meeting of two worlds of excellence: specialty coffee and haute p\u00e2tisserie. Born from a collaboration between the fine coffee house Coutume and pastry chef Fran\u00e7ois Daubinet, this place is based on the same values: technical expertise, product quality and respect for the origin of raw ingredients. All this in a prime location, nestled under the dome of the Galeries Lafayette Paris Haussmann.<\/p>\n\n\n\n

A caf\u00e9-p\u00e2tisserie experience<\/h3>\n\n\n\n

Together, Tom Clark, founder of the specialty coffee house Coutume, and chef Fran\u00e7ois Daubinet, an iconic figure on the international pastry scene, have designed this place like a true laboratory dedicated to tasting exclusive coffees and sweet treats within the Parisian department store.<\/p>\n\n\n\n

On the coffee side…<\/strong><\/p>\n\n\n\n

Coutume offers a carefully curated selection of single-origin coffees from rigorously selected terroirs in Colombia, Ethiopia and Guatemala, roasted in the Ile-de-France region and brewed to order by baristas. Each coffee is prepared with respect for the product, and customers can purchase beans to take away directly from the shop.<\/p>\n<\/div>\n\n\n\n

On the pastry side…<\/strong><\/p>\n\n\n\n

Fran\u00e7ois Daubinet has created exclusive creations designed to complement the coffees on offer:\n\n– L’Orchid\u00e9e<\/u>, a Tahitian vanilla and white coffee dessert.\n\n– L’Origine<\/u>, a tribute to the common roots of cocoa, coffee and vanilla.\n\n– The signature Gianduja tart<\/span>, as well as cakes, cookies and a pastry drink whose flavour will change with the seasons.<\/p>\n<\/div>\n\n\n\n

This space, designed by the architectural firm Ouvrage Paris, uses raw and noble materials to create a warm atmosphere that is faithful to the world of Coutume and the vision of chef Fran\u00e7ois Daubinet. The space offers around 40 seats for visitors to enjoy a coffee break or lunch, with a selection of savoury options including salads and sandwiches.<\/p>\n\n\n\n

Founded in 2010 by Tom Clark, Coutume Caf\u00e9 is a major player in the Parisian speciality coffee scene. Since 2011, the brand has been roasting exceptional coffees from the world’s finest terroirs. With 11 coffee shops in Paris, Coutume offers places to taste and discover coffee, where each coffee highlights its origin, the work of the producers and the aromatic richness of the bean. Also based in Los Angeles, where he runs his own coffee shop, he is renowned for his bespoke projects (as brand ambassador for Omega, among others) at the crossroads of art, craftsmanship and events.<\/p>\n\n\n\n
