The chef
Winner of season 11 of Top Chef and owner of Michelin-starred restaurant “Le Jardin des Plumes” in Giverny in Normandy, David Gallienne has set himself a new challenge by launching Label Broche in the heart of the French capital.
Around 70 miles from his Normandy home, David Gallienne is opening a corner at Gourmet to awaken the tastebuds of discerning diners and showcase French haute cuisine.
While he cites travel as a source of inspiration, he finds he is most inspired when out in nature with producers and farmers. They help him bring that little bit extra that makes all the difference – without ever losing sight of his roots!
A history of French fine dining
Featuring roast chicken, lamb shanks and pork knuckle cooked on a spit, Label Broche is an ode to high-quality produce and traditional comfort food. It’s no coincidence that roast chicken takes centre stage on the chef’s menu, given that it plays the starring role in a Sunday lunch and appeals to everyone – little ones and grown-ups as well as all religions.

“I wanted to create hearty comfort food just like my grandma used to, so this menu is a tribute to my grandparents!”
In addition to his talents in the kitchen, the chef sources the finest sustainably or organically farmed produce from within a 70 mile radius of his native Normandy and brings it to our tables here at Galeries Lafayette.
