A love letter to the Parisian bistro
After five wonderful years of vegetarian creations at Créatures, a new breeze is blowing. Same address, same chef, but brand-new ideas. Starting in May 2026, Balcon will bring its whimsical touch to the rooftop of Galeries Lafayette Haussmann. The concept was born from the encounter between Chef Julien Sebbag’s culinary audacity and the inspiration of the setting: a breathtaking view like few others in Paris.
The name was an obvious choice with a hint of wit: a balcony in the sky, putting the spotlight on the iconic Parisian monuments.


A unifying, “good mood” menu
At the heart of it all lies a deep-rooted love for the typical Parisian neighborhood bistro. “Balcon” offers seasonal, generous, and straightforward cuisine that pays homage to French tradition while injecting that touch of bold modernity so central to the Chef’s identity: black garlic devilled eggs (œuf mimosa), elderflower leek vinaigrette, or the classic hanger steak with peppercorn sauce.



“Good Mood” & summery plates
On the menu : true freshness and vibrant acidity through dishes designed to be enjoyed on a rooftop all summer long. We love the creative use of blueberry with gravelax, Greek yogurt, or fresh tarragon. True to Julien’s love for plant-based cooking, seasonal produce takes center stage: asparagus, peas, a family-style ratatouille recipe, and heirloom tomatoes that celebrate the taste of summer.
The love for nostalgic “comfort food” shines through in the truffle and parmesan coquillettes (elbow pasta) or the chocolate-pistachio profiteroles—to die for.

At Balcon, every day brings its own “canaille” treat. The Beef Bourguignon on Thursdays or the Aïoli on Tuesdays revive the nostalgic rituals of local neighborhood bistros.

A “parigot” bistro scenography
The decor affectionately revisits the codes of the classic Parisian bistro with a more brutalist approach: raw materials, woven bistro chairs in burgundy or bottle green : the very quintessence of a local neighborhood haunt.
The spirit: Absolute freedom. Whether for breakfast, a sun-drenched lunch, a cocktail “entre chien et loup” (at twilight), or dinner under the stars, you are carried by a soundtrack that evolves with the fading light of the day.
Julien Sebbag: A free spirit

Julien Sebbag is a self-taught Chef. Since first stepping behind the stove nearly ten years ago, he has championed a sincere, sensitive, and mindful cuisine that can be felt in every one of his recipes. Yet, he wasn’t necessarily destined for this path: it was while cooking for friends at home, and later during his many travels, that he “caught the bug” and gained the maturity needed to open his first establishment in 2019.
From his first steps at Chez Oim to his latest creations like Micho or Café Shin, he places sharing and human connection at the very heart of his cooking.
Balcon is accessible from the Coupole store during opening hours. After the store closes, it can only be accessed via the Victoire door, located at 25 rue de la Chaussée d’Antin.
